Holding it up by it's gills like that can't be exactly good for it, I'd think.

The gills aren't a big deal as long as he is holding the jaw bone which I am sure he was. However, Sturgeon are kind of like Lake Trout, they don't survive out of water very long. They get stressed easily in comparison to a Northern or Walleye.

You do know that's where caviar comes from right? I never heard of anyone eating Sturgeon. Where I live they are basically protected and you can only catch one of a certain size range per year.

Only time I ate any sort of sturgeon was when it was smoked. For the most part, any fish smoked is good. I'll even eat suckers smoked

Some of the sturgeon swimming in the Columbia River can be huge in size. As sturgeon are bottom-feeding fish, a lot of people out here won't eat them. Salmon are much better tasting, anyway.

Normally when you stick your hands in the gills and handle a fish the way that guy did you have sentenced the fish to death.

Yeah, if he touched the gills. I didn't pay that much attention to his handling. Sturgeon do stress easily so he probably did kill it.
