So I've got a question from a Bear's penalty in the first half - the refs blew a play dead when a Bear DL jumped. Penalty was 'neutral zone infraction'. How is that different from an offside?

Its not, its Defensive offside on the interior of the LOS. Called dead because an O lineman jumped.
