      CHICKEN ENCHILADA DIP


      INGREDIENTS
      1 pound skinless, boneless chicken breast halves
      1 (8 ounce) package cream cheese, softened
      1 (8 ounce) jar mayonnaise
      1 (8 ounce) package shredded Cheddar cheese
      1 (4 ounce) can diced green chile peppers
      1 jalapeno pepper, finely diced



      DIRECTIONS
      1. Preheat oven to 350 degrees F (175 degrees C). Place chicken breast halves on a medium baking sheet.

      2. Bake in the preheated oven 20 minutes, or until no longer pink. Remove from heat, cool and shred.

      3. Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, Cheddar cheese, green chile peppers and jalapeno pepper.

      4.Transfer the chicken mixture to a medium baking dish.

      5. Bake uncovered in the preheated oven 30 minutes, or until the edges are golden brown.

            Thank, Mike! That one sounds good. And I'm willing to do the tomatoes cooked, so I would probably just put them on first and put everything else over them so they cook. I'd never thought of cookie cutters with pizza dough before...

                  Alright, here's one for Mad:


                  Elotes

                  5 cups HELLMANN'S Real Mayonnaise 4 x 1 gal(2)
                  1 cup Cheese, Parmesan , or Mexican Cotija cheese
                  0.5 cup Chili powder
                  10 ears Sweet corn
                  Lime wedges



                  Preparation
                  1. Grill corn over an open fire.
                  2. When done, dip in mayonnaise.
                  3. Sprinkle with cotija cheese and dry ancho powder.
                  4. Squeeze with fresh lime.

                        Besides beer, chips and salsa.....

                        I've tried this and they're pretty addictive:

                        Take whole water chestnuts, wrap in bacon, secure with toothpics

                        Mix 1/2 cup sugar with 1/3 cup ketchup - pour over top of bacon/waterchestnuts.

                        Bake in a 350° oven. Until bacon is cooked through.

                                These are good. I've never made them myself but my sister brings them to parties quite often.
