These teams have coaches. We play a 5 man front on "run downs" we are gonna have teams throw on us a lot. They wouldn't have to mess our stellar CB's, there would be a lot of room underneath for the backs and TE's. Now we go 5-2. Who is the nose tackle? Do Harrell and Williams play a gap or a 3 technique? Where do the LB's play. Two of 'em sheltered with no Mike or with Hawk to the strong side, or what. How about the safeties? centered but up, or over the corners?
I just think you are dismissing the pass rush threat we could pose with KGB-Jenkins-Harrell or Jolly-Williams-Kampman out on the field. Who cares what "technique" they play? Tell them to beat the guy in front of them and get after the QB...because, as you point out, it is likely the offense will try to pass in those situations. Do you honestly think that is too much for these guys to comprehend...when they've been doing it since teenagers?
Ultimately, no one knows what could happen. It could work, it could fail. That is what the preseason is for...to tweak some things and see what happens when the score doesn't count. All I know is that our DL is the greatest strength of the team, so why not try to utilize it as effectively as possible in as many ways as possible?
